Raw Chocolate-Berries Cake

As I promised, I’m sharing Michal’s secret recipe for this gorgeous cake he and our kids made for my birthday yesterday 🙂 Raw Chocolate-Berries Cake!

I was so surprised as this was Michal’s first raw cake ever! So proud of him 🙂

Here is the recipe:

Base:

1 1/2 cup pecan nuts
12 dates
5 tablespoons raw cacao powder
2 tablespoons water
 
Cream:
2 cups soaked cashews
4 tablespoons coconut oil
1 cup water
4-5 tablespoons coconut nectar
1 teaspoon vanilla extract
juice from one lime
1 cup fresh or frozen mixed berries
 
Chocolate garnish
1/2 cup raw cacao powder
1/2 cup coconut nectar
1/2 cup coconut oil
 
Directions:
1. put all ingredients for the crust in a food processor and blend until well combined and sticky. Put the dough in your 23 cm cake form
2. put all ingredients for he cream except berries in your blender and blend until smooth. Pour 1 half over your crust, then sprinkle berries and pour the rest of your cream over the berries
3. melt the coconut oil and add the rest of the ingredients for the chocolate garnish. mix well and pour over the cream starting in the middle and going to the edges. Then use a tooth stick to make circles. Leave the edges untouched.
4. Put in a freezer for 4 hours or fridge for 8 hours.
