Raw Buckwheat Risotto Recipe

Today I’d like to share one of the recipes I have created for our friend who came to stay for the weekend with us to experience raw food lifestyle and learn more about this delicious and healthy cuisine.

Buckwheat is super nutritious, high in rutin and a great substitute for gluten grains as well as starches such as rice or potatoes. With low GI (glycemic index), this pseudo-grain is suitable for people with diabetes type I and II.

Buckwheat risotto

Buckwheat Risotto Recipe

Ingredients
1 cup of sprouted and dehydrated buckwheat
1 cup soaked cashews
3/4 cup water
3 tablespoons of tamari
5 tablespoons of nutritional yeast
2 spring onions

Directions:
1. Put your sprouted and dehydrated buckwheat in a bowl.
2. Put cashews, water, tamari and nutritional yeast in a high-speed blender and process until the cream is smooth and thick. Pour over your buckwheat “rice” and mix well
3. Garnish with chopped spring onion
