I made this raw dish as I was craving pesto, but wanted to try something different. So I came up with this broccoli pesto which is perfect for raw pasta or spread on your raw bread.
Raw Pasta Recipe
3 big carrots
2 big zucchinis
1 handful of cashews
1 clove of garlic (depends on your taste)
1-2 pinches of Himalayan salt
1 handful of basil leaves
1 teaspoon of lemon juice
2 tablespoons of olive oil
5cl (big shot) of water
a few rocket leaves for decoration
Peel the carrot first to get rid of the upper skin and keep peeling long carrot stripes. Do the same with the zucchinis (I normally use the zucchini’s dark green skin as pasta too as it is full of nutrients and gives you nice and colourful pasta). Mix carrot and zucchini pasta together in a big bowl.
Break broccoli head to small pieces and put to food processor together with cashews, garlic, basil leaves, lemon juice, a pinch of salt, olive oil and water. Blend until the mixture looks like pesto. If it is too thick, just add more water or lemon juice, depending on your taste.
Mix your beautiful pasta with broccoli pesto (I use my hands.. it is so delicious linking my fingers afterwards!) and sprinkle with corn and rocket leaves. Perfect and well done!
